Pigeon - Butter poached pigeon breast, chestnuts, pickled pear & red currants, chicory

2nd Course
Sea Bream - Spiced sea bream, smoked aubergine, cauliflower, lemon and fish emulsion
Beef - 'Donald Russell' 28 day aged beef fillet, oxtail & root vegetable pie
Pork - Iberian black pork cheeks, Pedro Ximenez, potato puree, glazed carrots, caper, raisin, black pudding sauce
Vegetarian - Celeriac, herb crispy parcels, puy lentils, salsify, slow cooked organic egg, red cabbage& apple sorbet
3rd Course
Cheese - Caerphilly cheese, apple & thyme, puff pastry finger
4th Course
Tropical Vacherin - (for two) crunchy meringue, pineapple sorbet, mango sauce
Chocolate - Poached pear, caramelised almonds, vanilla ice cream
